A bench-style hand press for squeezing string hopper (idiyappam) dough through a perforated disc straight onto steamer trays. It has a painted metal frame base, a stainless steel dough cylinder and a long lever arm with a wooden handle, so one person can turn out trays of string hoppers quickly with far less strain than a hand mould. Suited to hotel and restaurant breakfast lines, caterers and busy home kitchens that make string hoppers in quantity.
