A spun aluminium thachchi — a deep, round-bottomed wok with two riveted side handles for lifting when full. It is made for deep-frying, tempering, frying fish and cutlets, and stirring up curries and short eats over gas or a firewood hearth, and the light aluminium body heats fast and stays easy to handle. Suits home kitchens as well as small restaurants, caterers and boutique-hotel kitchens that fry to order.
