A heavy cast aluminium athili — a deep, round two-eared pan of the old Sri Lankan pattern, sand-cast with a thick base that holds heat and takes a beating over gas or firewood. Made for tempering, frying, deep-frying and slow-cooking curries, and equally at home simmering a big batch of sambol or kiri hodi. Size 7P is the vendor's size step, not a measurement; suits home kitchens as well as restaurant and caterer back-of-house where a light pan will not last.
